Who else loves Spongebob?

I know I’ve been neglecting my blogging for quite some time, honestly I’ve had nothing I wanted to talk about. All I do these days is play Warcraft, watch TV, and sleep… my health issues haven’t improved and no I haven’t seen a doctor nor do I plan too. I’m back to not leaving the house and having nightmares. I feel like I’m losing my mind and helpless to stop it .. like a car wreck in progress and unable to get clear of it. I actually gained back the weight I lost last year so once again at my highest weight ever which is wreaking havoc on my back and knees. I turned forty-seven this month and honestly I don’t think I’ll make it to see fifty at this rate.

colbys birthday cakeYou would think with summer on us that Jax would have taken advantage of dropping the boys off on us more than once a month. But nope, the boys we’re here the first week school let out back in June and the last week before school started, which was Monday. Colby had a birthday last month, he turned two. Sam got the most wonderful cake for the occasion, it was a two tier Bikini Bottom scene complete with the Spongebob and friends and the Crab Shack. We’re grateful she brought the party to us because it’s gotten to the point I just don’t go anywhere anymore.

Jenn is planning a trip home next month so we can meet the newest grand-baby Katybug. We’re all looking forward to that visit but I’m really upset that Sean isn’t coming with her. He seems to have some unspoken issues with us and for the life of me I can’t explain it. We used to be friends I thought but since he and Jenn split for that short time last year he’s never been the same. Jenn seems to think he’s let his own families issues spill over into his feelings for ours. Like maybe he thinks we think less of him and that’s the farthest from the truth, I love that boy I just wish he could see it.

Ali started first grade this week, hard to believe she’s six years old. Jon’s boys are both growing like weeds too and both looking quite silly because there momma or daddy keeps cutting there hair the silliest way — Mohawks. Seriously it’s funny even cute the first time — jokes over ya know. I have to say that I’m particularly proud of Jon & Ben, they’ve been doing well together for awhile now so I hope that means the bumps along the way are over. Of course it would be nice to see a wedding in the near future — of course three years in and he’s still not divorced his long gone first wife so I’m not holding my breath.  I could say the same for Steph & Tom they’ve really had it together the last year. Now if only my gurls would go out and make there own way instead of trying to divvy-up my property before I’m even dead. Hmmm ok that might’ve sounded way more harsh then what I meant for it too ….

Our Newest Addition .. Kathryn Paige

katyI’m super happy to announce the newest member of our family Kathryn Paige born April 6, 2014 at 3:40PM weighing in 2 6 lb. 15 oz. and 21 inches long. This is our army gurl’s first child,  our sixth grandchild and only the second girl. Sadly with my anxiety issues I wasn’t able to go be with Jenn which really makes me depressed…  hopefully it won’t be years before we get to see Miss Katy in person. I won’t hold my breath though because in the eight years Jenn/Sean have been married they only came home once (well Jenn was home recently so we’ve seen her twice). But officially we’ve only met Sean that one time… and seriously he was young and didn’t leave the greatest of impressions. Over the years he grew on me especially since we’re both geeks haha. I honestly love that boy more than he knows! Of course our legs aren’t broken … I’m just being whiny. But maybe one day I’ll wake-up and tell the ol’man let’s take a road trip! Hey you never know…

Jenn finished her degree but turns out the college is holding it hostage because they claim she still owes like a thousand dollars on her tuition. Sean finally jumped on board and is taking a lot of classes himself now. I feel bad because he’s so stressed out lately with his job contract running out just as the baby was due. He’s not in the army anymore but he is still working for them — private contracts. His contract ended the first and he’s still waiting on the new one to come thru even after being told he would go back to work within two weeks.

Let’s see what else is new .. not much really. Jax bought herself some land and a mobile home which she’s remodeling for her and boys. I’m happy for my gurl of course but I’d be lying if I didn’t admit I’m a little sad too because she had already told us she was going to setup a home out here close to us. Oh she’s also going back to school for her RN and Bachelor’s degree. She’s started a couple times before and something has interfered .. crossing my fingers for her that this time it all works out.

All is well with everyone else really .. nothing to gripe about (yet) anyway haha.

The Saddest Word

It’s hard to think about my Mom today, it would have been her 61st Birthday …

Tomorrow is my baby brother Trux’s birthday and in about 2 weeks is my other brother Art’s birthday as well. Since I prolly won’t get to talk to them I sure wish them both the best!!

Southern Style Strawberry Cake

Southern Style Strawberry Cake

Ingredients:
1 (18.5 ounce) box white cake mix (without pudding)
1 (3 ounce) package strawberry Jell-O
1 Tablespoon self-rising flour
4 teaspoons granulated sugar
3/4 cup vegetable oil
4 eggs
1/2 cup water
1/3 cup fresh strawberries, finely diced.

Directions:
Preheat the oven to 350 degrees F. To make the cake, combine to cake mix, Jell-O, flour and sugar in a large bowl. Mix well. Add the oil. Add the eggs one at a time, beating well after each addition. Add the water and strawberries and mix well. Divide the batter evenly into three 8-inch round baking pans that have been oiled and floured. Bake for 25-35 minutes, or until a tooth pick inserted into the center of the cakes comes out clean and the layers pull away from the sides of the pan.

Transfer the layers from the oven to wire racks. Let them cool, still in their pans, for 10 minutes. After 10 minutes, run a knife around the inside edge of each pan, then unmold each layer onto the racks to cool completely.

Cream Cheese Frosting:
1 (8 ounce) block cream cheese, softened
2 sticks (8 ounces) unsalted butter, softened
2 (1 pound) boxes powdered sugar
pinch of salt
1 teaspoon vanilla extract
1 cup sweetened shredded coconut
pink food coloring
4 sliced strawberries

To make the frosting, in a bowl combine the cream cheese and butter. Beat until soft and pliable and no lumps remain. Add one box of the powdered sugar, salt and vanilla extract. Beat until incorporated. Add the second box of sugar and mix until incorporated. If you would like a smoother consistency, and a slash of milk. If you would like a thicker consistency, and a bit more powdered sugar until the desired consistency is achieved. Put the coconut in a small bowl and sprinkle with two or three drops of pink die. Mix with hands to distribute the color and wash hands immediately. Once the cake is frosted, decorate the top of the cake with the shredded coconut and sliced strawberries.

Mexi-Quiche

“Refried beans are layered with chorizo sausage with eggs and Mexican cheese creating a Mexican-inspired quiche perfect for breakfast or brunch.”

Ingredients:
1 (9 inch) unbaked deep-dish pie crust
10 ounces chorizo sausage
6 eggs
1/4 cup milk
1 (10 ounce) can diced tomatoes with
green chile peppers (such as RO*TEL®), drained
2 cups shredded Mexican cheese blend, divided
1 (15 ounce) can refried beans

Directions:
1. Preheat oven to 400 degrees F (200 degrees C). Press pie crust into a 9-inch deep-dish pie pan.
2. Heat a large skillet over medium-high heat. Cook and stir chorizo in the hot skillet until browned and crumbly, 5 to 10 minutes; drain and discard grease.
3. Lightly beat eggs and milk together in a large bowl; stir in tomatoes with green chile peppers and half the Mexican cheese blend.
4. Spread refried beans evenly across the bottom of the pie crust; layer chorizo onto refried beans. Pour egg mixture over chorizo layer; top with remaining Mexican cheese blend.
5. Bake in the preheated oven until a knife inserted in the middle of the quiche comes out clean and cheese is lightly browned, about 45 minutes. Remove from oven and cool for 15 minutes before serving.

Chocolate Allspice Dessert Nachos

“Tortillas baked with a chocolaty allspice coating are layered with peanut butter and caramel dip for Mexican-inspired dessert nachos perfect for any party.”

Ingredients:
2 tablespoons white sugar
1 tablespoon cocoa powder
1/4 teaspoon ground cinnamon
1/8 teaspoon ground allspice
6 (8 inch) flour tortillas
1/2 cup butter, melted
1/2 cup peanut butter, melted
1/2 cup caramel dip
1/2 cup chocolate syrup
1/2 cup whipped topping (such as Cool Whip®), or more as needed

Directions:
1. Preheat oven to 350 degrees F (175 degrees C).
2. Mix sugar, cocoa powder, cinnamon, and allspice together in a bowl.
3. Coat both sides of flour tortillas with melted butter; cut tortillas into quarters. Coat 1 side of tortillas with sugar mixture. Arrange tortilla pieces in a single layer on a baking sheet.
4. Bake in the preheated oven until golden brown and crispy, 12 to 16 minutes.
5. Arrange baked tortilla pieces on a serving platter; drizzle with peanut butter, caramel dip, and chocolate syrup. Top with whipped topping.

Strawberry Margarita Sauce

“Strawberries are blended with tequila and lime juice delivering a margarita-inspired sauce perfect for desserts or over grilled chicken.”

Ingredients:
2 cups hulled strawberries
3 tablespoons lime juice
1 tablespoon honey
1 tablespoon tequila

Directions:
1. Blend strawberries, lime juice, honey, and tequila in a blender until smooth.
